Grilled Aubergine and Fresh Salsa
Colourful, flavour filled, quick lunch full of nutritious goodness.
- Cut the aubergine into slices (lengthways) and remove any moisture with a kitchen towel.
- Cook the quinoa according to the packet.
- Brush the aubergine lightly with the oil and grill until softened.
For the salsa:
- Chop the pepper, tomatoes, coriander and basil and place in a bowl.
- Stir in olive oil and lemon juice.
Lay out the aubergine, top with the salsa and quinoa.
