Mixed Chick Pea Salad With Garlic Avocado Dressing
A tasty, light salad with a wonderful avocado garlic dressing!
Ingredients
- chickpeas - 400g
- fresh spinach leaves - 1 big bag
- tomatoes - 3
- asparagus - 100 g
- red pepper - 1
- spring onions - 2
- avocado - 1
- lemon - juice of one
- garlic powder - 1 tsp
- Himalayan salt and black pepper - to taste
- onion powder - 1 tsp
- cucumber - 1/2
Instructions
- Steam the asparagus.
- Scoop out the avocado, mix with lemon juice, garlic, salt and onion powder and mash.
- Cut up all salad ingredients, put them into a salad bowl and mix together.
- Mix the avocado salad dressing together with the salad.
