Broccoli Boost Salad
Fresh, warm, vibrant Broccoli salad! Broccoli is a good source of fibre and protein, and contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins including folic acid.
- Chop all of the ingredients into pieces as above.
- Steam fry broccoli florets in a frying pan until they turn vibrant green in colour and still have a crunch.
- Put the broccoli and other veggies into a salad bowl and pour over the olive oil and lemon juice.
- Add the herbs, salt and pepper.
- Mix and enjoy!
