Garlic Courgette Ribbons with Almonds
A quick recipe, ideal for a snack, lunch or side. Extremely tasty and filling!
Ingredients
- spring onions chopped - 3
- garlic clove,crushed - 1
- courgettes, sliced or made into ribbons - 2
- sliced almonds - 1 tbsp
- olive oil
- himalayan Salt and Pepper
- lemon - squeeze to taste
Instructions
- Set a pan on low heat, add olive oil and warm garlic and onion
- Use a vegetable peeler to slice the courgette into ribbons.
- Add courgette to pan and soften.
- Add almonds, stir and add salt & pepper.
- Serve with lemon to squeeze over to taste.
